Our Food Story
Michael was born on Dublin and worked in his father's fruit and vegetable business, providing fresh produce to hospitals, restaurants and pubs.
As for me, Mary, I am also a Dubliner and after meeting Mike in the late 1970s, we got married in 1980 and had three boys. Maybe it was an '80s thing but we decided to move to Dallas (home of TV baddie JR Ewing) and we worked in catering for a spell. In professional kitchens, they say if you can't stand the heat.... Well, we can tell you, it was hot, hot, hot in Texas.
I suppose we missed the Irish rain too much, so we moved back to Ireland with the kids, running a restaurant and takeaway in Charleville, Cork.
After completing chef training, our food horizons widened, we taught trainee chefs, worked in many different restaurants and hotels and we even managed the food operations for a global tech brand.
